Barbecued Asparagus with feta
 

I was cooking some chicken on the barbie and had some asparagus in the fridge, so rather than get another pan on, I thought I would try something a little different and cook them over the coals. It was never going to be bad given everything is better cooked over coals. The only important part is not over or undercooking or burning them.

The results were spot, gaining a FatSteak Club seal of approval!
 

Step 1 - Prepare

  • This does assume that you already have some coals on the go

  • Get your metal skewer and thread it through the bottom of the asparagus one by one. If your asparagus are large you can use another further up to make handling them easier
    If they are small, you may lose some of the heads as you can see below, don’t worry!

  • Brush them with some vegetable oil

 Step 2 - Cook

  • These take about 10 minutes to cook depending on your heat

  • Use the skewer to manoeuvre the asparagus as one, turn every few minutes

  • When they are soft but have a little resistance when giving them a squeeze, they are ready

Step 3 - Serve

  • Once ready, remove the asparagus from the skewer on to a serving dish

  • Crumble some feta over, drizzle with some extra virgin olive oil, sprinkle with some dried greek oregano and then season well with ground pepper and course salt

  • Extra Virgin Olive Oil

  • Feta

  • Ground pepper

  • Course salt
