Curried Wings
 

One thing we really love here at The Fatsteak Club is wings. There are already a few recipes to tingle the taste buds on the blog which are all awesome, this is another one to add to the bucket but with an Indian twist.

These don’t need to be done on a bbq, though it doesn’t hurt to finish them to give them a little smoke and char. Everything tastes better on the bbq after all.

It’s a super simple recipe, just needs a little time to let them marinate overnight to make sure they are nice and tender, full of flavour and you can suck them straight off the bone.

Top tip, don’t wear anything white when eating these and make sure you have plenty of paper towels handy!

Step 1 - Chop the wings and marinade

  • Split your wings if they are whole, removing the tips (keep for stock in the freezer)

  • In a large bowl, add the yoghurt, spices and lemon juice

  • Mix up well and add your wings, then pressing down so everything is as covered as it can be

  • Cover and leave in the fridge overnight

 

Step 2 - Cover and cook

  • Heat the oven to 180C

  • In a shallow pan with a lid, put all the wings and all the marinade in and spread out

  • Cook the wings for 40 minutes until everything is bubbling

  • Remove the wings to a rack over a tray and cook in the oven for another 7 minutes so that they start to crisp up a little

  • Whilst this is happening, start reducing the sauce

  • When the wings are done, remove and cover with some tin foil until the sauce has thickened

Step 3 - Sauce it up

  • With the pan uncovered, over a medium heat, start to reduce the marinade.
    Make sure it’s not too hot as you don’t want it to split (If it does, lower the heat and bring it back with some lemon juice, a knob of butter and a spoonful of yoghurt, stirring until it comes back together)

  • Add a good knob of butter, a good squirt of tomato ketchup and a couple of teaspoons of sugar

  • When the sauce is very thick and sticks the to back of a spoon, it’s good to go

  • Arrange your wings in a bowl and cover them with the sauce

  • Slice up some chives and sprinkle over

Curry Wings

  • 1kg whole chicken wings

  • 500ml full-fat greek yoghurt

  • 1 tbsp garlic powder

  • 1 tbsp ground cumin

  • 1 tbsp chilli powder (or less or more, depending on how hot you like it)

  • 1/2 tbsp smoked paprika

  • 1 tsp turmeric

  • 1/2 tsp ground coriander

  • 2 tbsp lemon juice

  • Chives
