Dirty Bones - Hero kit!
 

Restaurants have had a tough time of late. As we slowly make our way back into hospitality there is still time to help by ordering home kits. To me, a decent home kit should give me just enough to do in the kitchen so I feel I have earned the meal, but also provide me with something I wouldn’t usually make myself.

This weekend the hankering was for a decent burger. Having eaten in the restaurant a couple of years ago I was keen to try another burger from Dirty Bones. One meal kit stood out - the Hero kit for two. Two short-rib and mac ‘n’ cheese topped burgers with a pile of lamb fries and an Old Fashioned to wash it down.

The preparation was relatively easy, timing was key for this meal kit. Have a read through the instructions, hit up the Spotify playlist and get heating! The short-rib and lamb meats made the dish, both benefiting from decent slow cooking.

Step 1 - What’s in the box?

  • Everything you need is in the box, packaged in lots of plastic, unfortunately, but it kept the food fresh

  • There is minimal preparation to do, just a spring onion and a chilli to finely slice. Everything else is portioned ready. To keep the quality the cheese sauce is separate from the macaroni - nice touch

  • The whole kit is delivered overnight and arrives chilled and vacuum packed

 Step 2 - Cook / assembly

  • You will need quite a few pans, an oven, a grill and a sense of timing. Nothing is particularly difficult, but bringing it all together, hot, at the same time requires a little effort

  • Pan 1 - velvety cheese sauce and pre-cooked macaroni, heat and leave to thicken

  • Pan 2 - lamb belly, to fry until crispy, then coat in a miso glaze

  • Pan 3 - gently heat the short-rib

  • Pan 4 - burger time! Fry the four patties, cover two with cheese slices

  • Oven - fries, bake until crispy and browned

  • Grill - lightly toast the seeded brioche buns

  • Build according to the great instructions - burger bun, burger, cheese, burger, short-rib, mac and cheese, bun top. Bowl of fries, top with lamb, jalapeno dressing, spring onion and chilli.

There is plenty of food here, the burger looks messy, but is totally handheld, the mac ‘n’ cheese helps keep everything together. The fries are the star of this kit though. Crunchy skinny potato fries covered in crispy lamb, cut with spicy jalapeño dressing.

Is it worth it? Highly recommended, well worth the washing up and effort for a great burger. Totally worth it for the fries alone. The time and effort that goes into the short rib and lamb belly are not something I would do just for a burger, so having it prepared for me, ready to heat and assemble was perfect!
