Lamb and Halloumi Burger
 

Yes, a burger again I know but this one is made of lamb so it’s same same but different as they say! I also made it square to match the ciabatta roll I bought for it.

This is one of the things that makes burgers great, the combinations and explorations are limitless, so whatever you feel like you can bring it together, stick it between some bread of your choice and pretty much always, it’s satisfying.

So this time it’s a not so little greek inspired burger, with some punch balanced out with a bit of tzatziki inspired sauce to balance it out.

 

Step 1 - Make your burger

  • In a bowl add your mince, chopped onion, bread crumbs, egg, chipotle paste, some ketchup and garlic powder

  • Get stuck in with your hands to mix it up well and form it into a square burger.
    Top tip: I used an oiled plastic pot to help with this

  • Turn out onto a plate and put in the fridge whilst you prep the rest

Step 2 - Sort your filling

  • Slice some halloumi cheese and set aside

  • Slice some big tomatoes into a pot, cover with a little cider vinegar and salt and mix

  • In a separate bowl, add the yoghurt

  • Slice a chunk of cucumber, deseed then finely dice. Add this to the yoghurt

  • Add a splash of cider vinegar and a good pinch of coarse salt

  • Give it a good mix



Step 3 - Cook and build

  • Put a hot griddle pan on a high heat, then when it’s very hot and just smoking, turn it down a little

  • Lightly oil your burger and put it on the griddle for a few minutes then flip

  • When it’s flipped add your cheese to the side and it can cook in the run-off juices and start to soften

  • Whilst this is going on, slice your roll and either lightly toast the insides under the grill or in the pan if you have room

  • Then spread on a layer of the yoghurt on the bottom

  • When the burger is cooked, remove it from the pan to rest and turn off the heat. The cheese is pretty robust to stay in the pan for a couple of minutes extra but if it looks like it’s cooked remove this too

  • When rested, add the burger to the bun, then the tomatoes, top with some rocket and dress with the tomato juice from the pot

  • Finally, add the cheese and top it with the bun

  • Serve with some well-salted oregano flavoured wedges.

  • 250g Lamb mince

  • 1/2 red onion diced

  • 2 heaped tbsp breadcrumbs

  • 1 good squirt of chipotle paste

  • 1 egg

  • 1 tbsp of garlic powder

  • 2 x Ciabatta rolls

  • Halloumi

  • Full-fat greek yoghurt

  • Wedge of cucumber

  • Good course salt

  • Cider Vinegar

  • Large or beef tomatoes

  • Rocket
