Mega Mushrooms
 

Ah, the humble mushroom. They love garlic, they love bacon but I’d never cooked it up Indian style in a dish as the main event. So seeking some inspirations from my cooking library I was inspired by this little number from the aptly named Curry Bible.

It doesn’t take too long to cook, there’s a 10 minute wait in there but that’s enough to set the table and make a drink.

 

Step 1 - Prep

  • Chop up your mushrooms into not too thin slices

  • Dice up your onions

  • Slice some chives, a jaunty angle gives a little extra aesthetically

  • Slice a red chilli

Step 2 - Cook it up

  • Heat a heavy bottomed pan that has a lid on a medium heat and add the oil

  • Cook the onion and chilli with a pinch of salt

  • Keep the mix moving, making sure it doesn’t burn. You want the them soft but not browned

  •  Add the garlic and cook for a couple more minutes

  • Add your spices and stir in for a minute or two

  • Finally in go the mushrooms, tomato puree and a bit more salt

  • Give a good mix until everything is well coated

  • Splash over the water, give the pan a little shake, cover and leave on the lowest heat for 10 minutes

  • Once done, if the sauce is still a bit runny, remove the lid and let it cook a bit longer until its reduced and thickened

  • Serve up sprinkled with the chives

 

Mega Mushrooms

  • ~500g Mushrooms

  • 1 onion

  • Chives

  • 1 red chilli

  • Salt

  • 2 tsp garlic puree (fresh garlic works well too)

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1/2 tsp chilli powder

  • 1 tbsp tomato puree

  • 3 tbsp water
