Indonesian Chips
This recipe came from wanting some chips whilst I was playing around with some Asian inspired burger recipes. I went to my usual go to book for some inspiration, where I came across these Indonesian style chips.
Step 1 - Prepare
Peel and dice some potatoes
Cook for 10 minutes in boiling salted water then drain and leave to cool completely
Slice half a red onion fairly thinly
Mix some chilli flakes (as hot as you like) in some light soy sauce
Step 2 - Fry up
Heat a pan of vegetable oil to 180C and cook the potatoes in batches until just brown
When the potatoes are done, deep fry the onions until just brown
Remove and drain and the onions will go crispy
Step 3 - Serve
Put the chips in a bowl, sprinkle with a little salt
Sprinkle over the chilli soy sauce and gently toss the potatoes to coat
Top with the fried onions
Then another generous sprinkle of chilli and salt to taste
