I love Saag Aloo
For me, an old-fashioned curry isn't complete unless Saag Aloo is involved. I have eaten so many Saag Aloo's, it seems to be one of those dishes that everyone does differently.
So this one is my take aimed at being as close to the takeaway ones that I like.
Step 1
- Chop up your onions and potatoes
- Mix up the ground spices
- Par boil potatoes for 10 mins
- If using frozen spinach, pull it out the freezer now and put in a bowl
Step 2
- Heat up your ghee in a big pan on a low heat
- Add spices a stir for 1 minute
- Add onions and tomato puree
- Cook out the mixture, add a little water if starts to dry out
Step 3
- Add potatoes and stir well
- Finally put in the spinach, a splash of water, give it a good stir and put the lid on for 5 minutes until the spinach is all wilted
- Give it one final mixed up
- Serve with a good curry!
Saag Aloo
- 3 decent sized potatoes
- A bag of spinach or 6 cubes of frozen
- 2 onions
- 2 tsp ground cumin
- 2 tsp garam masala
- 2 tsp garlic powder
- 1/2 tsp turmeric
- 1/2 tsp chilli powder
- Salt & pepper
- A good squeeze of tomato puree
- Ghee
